Bikini Recipe
Serves 10 servings
For the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar
To make the Cocktail (produces 850ml, serving 10)
400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish
Method
For the Cordial: Combine the listed ingredients into a pot, heat until it reaches a simmer, agitating to dissolve. After that, remove from the burner and leave to cool fully. Transfer to a sealable bottle, cap it and store chilled, where it will keep for about four weeks.
Preparing the Premix: Combine the specified spirits and syrup in a large bottle, let it rest for an hour, then strain , ideally through cheesecloth, so it's completely strained.
When ready to serve: Add 85ml of the batch mix into a cocktail shaker packed with ice, and agitate carefully for a minute until cold. Filter into a chilled martini glass or equivalent, garnish with a few cranberries adding the final touch with a quick spritz of the essential oil above the glass.
